My Expertise and Experience
Academic Background
College studies in nutrition and a university bachelor's degree in food science, completed by 300 hours course to obtain my GAPS* Coach (Gut and Physiology Syndrome) certification in 2025.
Sports Experience
30 years of regular training and 400 cycling competitions, enriched by 5 years of adopting new sports activities including weight training and running, while also embracing these new eating habits.
Personal Journey
10 years of menopausal transition and 2 years of lifestyle changes that have yielded remarkable results for both myself and my 56-year-old husband.

*This protocol can be applied preventatively or established during the healing phase, but it is not a medical treatment in itself. No food supplements will be suggested or recommended as I am not a nutritionist member of the Quebec Order of Dietitians.

Evaluation & Planning
Gathering information about your life context, intolerances, and other relevant details. Review of questionnaires, necessary equipment, pantry inventory, and advice on where to buy food. In-depth discussion of your personal habits and objectives.
Program Launch, Phase 1
Presentation of the personalized plan including weekly nutrition and activities. Development of the plan's implementation schedule (3-4 weeks), instructions for the food diary, and recommendations for recipes and activity types.
Adjustments & Phase 2
Analysis of the personal journal and discussion of encountered difficulties. Personalized adjustments for Phase 2 (4-5 weeks), adoption of new recipes, and integration of other beneficial changes to progress towards your goals.
Consolidation & Autonomy, Phase 3
Evaluation of progress and definition of Phase 3 (4-6 weeks). Definitive integration of new habits, final action plan, and ensuring your new lifestyle has become easy and enjoyable to maintain.

The GAPS formula completely transformed my diet and allowed me to rediscover the best version of myself in spring 2025. I had been suffering from acute digestive problems for several months before Carmen's intervention. My SIBO-related symptoms were far from trivial: irritation, inflammation, bloating day and night, and this for a long period.
I had tried to resolve the situation by consulting specialists, taking antibiotics, eliminating several foods, and trying an impressive number of expensive supplements. Nothing worked. The digestive discomfort gradually turned into anxiety and insomnia.
